Our family’s Sunday night tradition is to have dessert and a movie.  Each kid gets their turn for picking a dessert.  Last month, this dessert was requested twice, which ended up being a blessing in disguise as I needed pics for this delicious dessert!

As I look over this recipe while I’m posting the only comment I have the following two comments:

1.  Use shortening.  Don’t use coconut oil.  I tried it.  It’s not as tasty as you would hope it would be. :).  The simple shelf staple of shortening is the blandest flavor which allows the lemon flavor to be pronounced.

2. I can’t say this is corn free because it has cornstarch and powdered sugar in it.  However if you are also allergic to corn, don’t despair.  Use arrowroot in place of the cornstarch and top with homemade powdered sugar.

Ingredients

  • -Crust:
  • 1 c. Gluten Free Baking Mix (or if gluten free flour does not have xanthan gum in it, add 3/4 tsp.)
  • 1/3 c. vegetable shortening
  • 1/4 c. powdered sugar
  • -Filling:
  • 1 Tbsp. egg replacer
  • 1 c. sugar
  • 1 Tbsp. cornstarch or arrowroot
  • 1 tsp. baking powder
  • 2 Tbsp. lemon juice
  • ¼ c. warm water
  • -Topping:
  • Powdered Sugar

Instructions

Preheat oven to 350 degrees. Grease a 9x9 baking pan.

In a medium sized mixing bowl, mix first three ingredients of gluten free baking mix, shortening, and powdered sugar. Using a pastry cutter or 2 knives, disperse the shortening until it is pea sized chunks.

Pour into the 9” square pan and pat down.

Place in oven and bake 15 min at 350*. When done, let the crust cool.

While the crust is baking, in the same medium sized mixing bowl, mix with a mixer or whisk the egg replacer, sugar, cornstarch/arrowroot, baking powder, lemon juice and warm water.

When the crust has cooled, pour over crust and bake 25 minutes at 350*.

Let cool.

Dust with powdered sugar.

If you can wait for 15-30 minutes before serving, the lemon bars get sweeter as they cool.

Serve with a big cold glass of milk of your choice.
